Crepes Suzette

The ideal meal to have with guests...

Serves: 4

Ingredients:

500ml Milk

3med Eggs

250g Plain Flour

50ml oil

Pinch of salt

75g Butter

180g Brown Sugar

100ml Orange Liqueur

1/2 Lemon

4 Oranges

Instructions:

Mix milk, eggs & oil in a bowl, pass the flour & salt through a sieve into the liquid mixing but not beating.

Leave to rest for at least 1 hour.

Cook pancakes in a med hot pan without a lot of colour.

Place on to a clean dry surface to cool.

(pancakes may be stored together in packs wrapped in cling film and kept in a freezer).

Zest 1 orange & half lemon for garnish.

(without a zester use a vegetable peeler and then cut the rind into thin strips).

Bring to the boil in water, refresh in cold water, strain & reserve for later.

Melt the butter in a large pan and add the sugar. Cook for a couple of minutes and add the orange liqueur juice of 4 oranges & half of 1 lemon.

Soak the pancakes in the cooking liqueur and serve warm with sprinkles of zest.
